Laziza Paya 100g

Paya means "leg" or "foot" in Urdu and Hindi, and the dish is exactly that: trotters from goat, lamb, cow or buffalo, slow-cooked for hours until the meat is tender and the broth turns rich and gelatinous. It's traditionally a winter breakfast dish in South Asia, served with naan. Laziza's Paya Masala blends red chilli, coriander, roasted cumin, garlic, ginger, clove, cardamom, cinnamon, mace, star anise and bay leaves into the warming spice base the dish needs, with two sachets per box.

Boil the trotters in plenty of water with onion, ginger and garlic for several hours, goat or lamb taking 3-4 hours, beef taking 6-8, until the meat is tender. Separately fry onions in ghee until golden, add the masala and a little yogurt, then stir this into the trotter curry and simmer for a further 20-30 minutes. Serve with fresh coriander, ginger shreds, green chillies and naan.
