Yakhni means meat stock, and that's exactly what defines this dish: meat is boiled with whole spices, garlic and ginger to create a clear broth, the whole spices are then strained out, and the rice is cooked in that strained stock rather than alongside visible meat and masala. How to use it
Boil your meat in water with the masala, garlic and ginger until tender, then strain the stock and discard the whole spices. Fry onions until golden, add the meat back in with the strained stock, bring to the boil, then stir in drained soaked rice, cover tightly and cook on low heat for around 20 minutes without disturbing. Serve with raita, salad, or alongside shami kebab.
