Shan Biryani 50g
Unlike Shan's Sindhi or Bombay Biryani, this is the brand's standard, all-purpose blend, Himalayan pink salt, garlic, ginger, cumin, bay leaf, brown and green cardamom, cinnamon, carom, clove, red chilli, coriander and turmeric, without the dried plums or specific regional technique those other blends are built around. It's suited to chicken, mutton, beef or vegetable biryani.
How to use it
Heat oil and fry onions until golden, add meat and the masala and stir-fry for 5 minutes. Add yogurt and water (4 cups for beef or lamb, 2 cups for chicken), cover and cook on low heat until the meat is tender. Add tomatoes and stir-fry on high heat until the oil separates from the gravy. Separately, boil rice in salted water until three-quarters cooked, drain, layer half the rice in a pot, pour over the meat curry, top with the remaining rice, and cook on low heat until the rice is fully done.
