Shan Butter Chicken Seasoning Mix 50g

Butter chicken is one of the most internationally recognised dishes from the region, chicken cooked in a rich tomato, butter and cream sauce, milder and creamier than a tomato-and-chilli karahi, and built on a different base than the yogurt gravy used in qorma. Shan's Butter Chicken Seasoning Mix blends red chilli, turmeric, cumin, black pepper, large and green cardamom, cinnamon, clove, ginger, garlic, star aniseed and white pepper into the spice base for that specific tomato-butter-cream combination.

How to use it

Mix the seasoning with lemon juice, yogurt and oil, and marinate your chicken for 1-3 hours. Boil tomatoes until soft, then sieve to remove the skin and seeds for a smooth puree. Pan-fry the marinated chicken briefly, then add it to the tomato puree, cover and cook on low heat for around 15 minutes. Stir in butter, cook for a further 5 minutes, then add cream and remove from the heat. Serve with naan or rice.
