Shan Lahori Charga 50g

Shan's Lahori Charga Masala is built for the same distinctive technique, chicken marinated, steamed until tender, then deep-fried until crisp, but the exact recipe is Shan's own: red chilli, cumin, star aniseed, garlic, ginger, cinnamon, brown and green cardamom, turmeric and carom, without the fenugreek leaves or clove found in Laziza's blend.

How to use it

Mix garlic, ginger, lemon juice and the masala into a paste, and apply it evenly over a whole skinless chicken with deep slits cut into the breast and thighs. Marinate overnight or for 3-4 hours. Steam the chicken until tender using a steamer, or a covered pan with the chicken raised on a plate over a little water, for 20-30 minutes. Heat oil in a deep wok and fry the chicken until golden and crisp on all sides. Sprinkle with chaat masala and a squeeze of lemon before serving.
