Shan Nihari 60g
Nihari is a legacy of Mughlai cuisine, shank meat slow-cooked for hours and thickened into a rich, dark gravy. Shan's Nihari Masala blends red chilli, paprika, nigella seed, garlic, dehydrated onion, cumin, bay leaf, aniseed, green cardamom, black pepper, ginger, clove and fennel into that traditional base, with its own distinct recipe from Laziza's version of the same dish.
How to use it
Heat oil, add your meat and the masala, and stir-fry until the oil separates. Add water and any bones for marrow, bring to the boil, then cover and cook undisturbed on low heat, beef needs around 6 hours, goat or lamb 4 hours, chicken 3 hours. Remove the bones, collect the marrow and stir it back into the gravy, then gradually stir in flour dissolved in water and simmer for a further 15 minutes. Finish with onions fried until golden, and serve with naan, ginger and green chillies.
