This pack is built around split gram flour, with red chilli, cumin, coriander, fenugreek leaves, black pepper and aniseed pre-blended in, so all you add is water and vegetables or meat. What's genuinely useful here is that Shan's own packaging gives two distinct methods from the same mix: pakora, made by mixing with water into a smooth batter, and bhajia, made without water at all just onion, chilli and coriander kneaded into a rough dough.

How to use it
For pakora: mix chopped chillies, sliced onion, coriander and the mix with a cup of water into a smooth batter, rest for 15-20 minutes, then deep-fry spoonfuls until golden. For bhajia: mix sliced onions, chopped green chillies and coriander with the mix without adding any water, knead into a rough dough, shape into small balls, and deep-fry until golden. Either way, finish with a sprinkle of chaat masala and serve with chutney.
