Shan Shami Kebab 50g

Shami kebab is made by cooking minced meat together with split gram lentils until both are tender, then grinding into a smooth paste and shaping into patties, the same technique as Laziza's version, but Shan's recipe is its own: coriander, salt, red chilli, paprika, dehydrated onion, garlic, ginger, bay leaves, black cumin, black pepper, green cardamom, cumin, cloves, fenugreek seeds and carom, without the dried mango that gives Laziza's blend its tangy edge.

How to use it

Cook minced meat with chana dal, chopped onions, ginger paste, garlic paste and the masala in 8-10 cups of water, bring to the boil, then cover and cook on low heat until the meat is tender and around 2 cups of liquid remain. Remove and grind the mixture coarsely, mix in a beaten egg, and shape into about 20 round, flat patties. Shallow or deep fry until crisp and golden on both sides.
