Shan Foods has been making recipe mixes since the 1980s and is one of the most recognised spice brands from Pakistan. Their Sindhi Biryani Masala blends Himalayan pink salt, red chilli, dried plums, paprika, coriander, turmeric, cumin, cinnamon, clove, black pepper, ginger, aniseed, carom and brown cardamom into the bold, peppery profile Sindhi biryani is known for — a different exact recipe from Laziza's or Jazaa's versions, though built around the same regional style.

How to use it

Fry sliced onions in oil until light golden, then add your meat, garlic and potatoes and fry for around 10 minutes. Stir in the masala, yogurt and ginger paste, fry for 5 minutes, then add water and cook covered until the meat is tender, leaving about two cups of gravy. Lay sliced tomatoes, green chillies, coriander and mint over the meat without mixing them in, cover and cook for 5 more minutes. Separately, boil rice in salted water until three-quarters cooked, drain, then spread evenly over the meat without mixing, cover, and cook on low heat until the rice is tender.

Important note: like other Sindhi biryani masalas, this one contains dried plums with their pits still in, remove these once cooking is finished, before serving.
