Shan Special Bombay Biryani 60g
Shan's Special Bombay Biryani Masala blends salt, red chilli, dried plums, fenugreek seed, dill seed, turmeric, cinnamon, black pepper, cumin, nigella seed, bay leaf, fennel, brown cardamom, ginger, garlic and clove, a different exact combination from Jazaa's Traditional Bombay Biryani or Laziza's Zafrani Bombay Biryani, though all three share the same Mumbai-style regional roots. Unlike Laziza's Zafrani version, this one doesn't include saffron, putting it closer to a traditional, everyday Bombay biryani than a more luxurious variant.
How to use it
Fry sliced onions in oil until golden, add tomatoes and fry until the oil separates, then add meat, garlic paste, ginger paste, yogurt, potatoes and the dissolved masala, and stir-fry for 10 minutes. Add water (4 cups for beef or lamb, 2 cups for chicken), cover and cook on low heat until the meat is tender, then increase the heat and fry until the oil separates from the gravy. Separately boil rice until three-quarters cooked, drain, layer half the rice in the pot, pour over the meat curry, top with the remaining rice, cover, and cook on low heat for 5-10 minutes until fully cooked.
