Shan Tikka BBQ Steak Blend 50g

Shan's Tikka BBQ Steak Blend is a different recipe from Shan's own Chicken Tikka mix, and it's built to handle beef, lamb or chicken cut into thin strips or small cubes rather than chicken specifically. It blends paprika, red chilli, musk melon, cumin, coriander, black pepper, cinnamon, brown cardamom, ginger and garlic, with dried papaya powder doing double duty as both flavour and a natural meat tenderiser, the same role raw papaya plays in the traditional recipe.

How to use it

Mix the blend with water, garlic, ginger and a little raw papaya if you have it, and coat the meat thoroughly. Marinate for 3-4 hours, then remove and discard any raw papaya slices used. Thread the meat onto skewers and grill on low heat over charcoal or gas, turning until tender, brushing with butter or ghee near the end. Serve with tamarind or green chutney, salad and lemon.
